Automatic Coffee Machine
The coffee is produced using the "brewing pressure process".
Originally, automatic machines were developed in Switzerland for the catering industry. They were used to make Café Crème and were therefore not primarily intended for espresso.
Today's high-end automatic machines are equipped with ceramic grinders, feature intelligent pre-brewing processes and produce a wide variety of coffee specialties.
Automatic programs take care of their cleaning, reminding you to rinse, clean, and, if necessary, descale. Some models even have an internet connection or can be controlled via special apps.
How is coffee made in an automatic machine?
Here's the answer:
- The water is heated by the heater (flow heater)
- The coffee water is sucked in by the pump
- The coffee beans are ground according to the set grind size, and possibly also the grind quantity
- The ground coffee powder is pressed and compacted into the brewing chamber of the brewing group
- The coffee water is then pressed through the brewing chamber (i.e., through the coffee powder) with a contact pressure of approx. 8 bar
- The finished coffee flows into the coffee cup via the coffee spout
- After extraction, the coffee puck is ejected into the so-called spent coffee container
This is the simplified preparation process for a household automatic coffee machine.
What should an automatic machine be equipped with?
The following features conjure up wonderful coffee in your cup from our high-quality beans:
- A good grinder for minimal noise with manually adjustable grind size and, ideally, grind quantity
(8-9 grams of coffee per cup)
- A so-called pre-brewing process for pre-infusion, meaning the coffee powder is first moistened to allow for good extraction of coffee oils and aromas
- Two heating circuits, i.e., one for the coffee water and one for steam, so that coffee and steam can be dispensed simultaneously. The coffee water should reach a temperature of 88 - 94 degrees Celsius
- For milk coffee lovers, an integrated milk system with self-cleaning to facilitate the elaborate cleaning of the milk hose
- An integrated water filter
- A heated cup warmer
- Optionally, a removable brewing unit for easier cleaning
The crucial point, however, is the pressing of the coffee water at 88 - 94 degrees Celsius through the coffee powder in the brewing chamber. This determines the quality, aroma, and digestibility of the coffee.
The finer the grind at this point, the longer the pressing time. Both the grind size and the grind quantity determine the strength of the coffee. The optimal amount for this process is 8 to 9 grams per cup. If strong coffee is desired, a very fine grind is advantageous; for less strong coffee, the beans are better ground coarser.
Finally, it should be mentioned that true espresso lovers swear by manual preparation with a good espresso grinder and portafilter machine, and only use automatic machines when convenience plays a special role in everyday life.
