The addition AA indicates particularly fine and large beans. 3-4 weeks after roasting, the coffee reaches its full potential.\u003c\/p\u003e\n\u003cp\u003eThe unique taste of India Monsooned Malabar is thanks to the following elaborate processing: After harvesting and processing, India Monsooned Malabar is exposed to the monsoon winds. This process is called \"Monsooning.\" It is a special process intended to produce particularly mellow coffee. The origin of this process dates back to when coffee from India was transported to Europe by ship. The voyage took a very long time, and the coffee was exposed to the sun and monsoon winds. The beans developed a slight yellowish tint and changed their taste. Today, this process is mimicked on the coast for this coffee, among others. After harvesting, the beans are sorted and dried. Then they are exposed to the monsoon winds, which blow in southwestern India between June and September, and to humidity. During this time, the sorted and classified beans are spread out on well-ventilated floors in special warehouses. They remain there for several days and must be constantly turned. Due to increasing humidity, they swell and acquire their characteristic color. Then they are loosely filled into jute sacks, which are stacked at a sufficient distance from each other. Approximately once a week, the sacks must be re-filled to prevent mold infestation and ensure uniform \"Monsooning.\" The winds circulate around the sacks. After about ten weeks, the process is complete.
